I want to make my own wine. If this is what you have decided then the biggest problem that any winemaker can face is it that of incomplete or negligible fermentation. This problem can be extremely frustrating considering the huge loss that it entails. The most important step in fixing this problem is to figure out what went wrong. Most of the time, the reason is that dead yeast was used. However it is difficult to realize this until the problem occurs. Another potential problem is the pulpy mixture of fruit pulp and skins added to a wine which in some cases, was not made correctly and hence fermentation did not occur properly.
I want to make my own wine but I don't want it too sweet and this is a problem many home makers end up with. The sweetness depends on the time fermentation is allowed to carry on for. Another possible cause could be excess sugar that may be in your mixture. One easy solution is to repetitively ferment the mixture by adding more yeast until the excess sugar is removed. Unfortunately, if your second fermentation is not successful, then you will probably have to throw the batch away. You may also try mixing the sweet wine with dry wine although improper mixing may result in yet another sweet wine.
It is also very important that you check the progress of your wine as perfect fermentation time is the key to the perfect wine. It is usually helpful if you take the time to troubleshoot your problems and figure out the stage the problem took birth. If the problem occurred at a particular stage, backtrack that stage and figure out what you did wrong. It is crucial that the problem is identified as it will help prevent the same mishap occurring in future fermentations.
Regardless of your problem, it is important that the problem is realized at an early stage as this will help you in future fermentations and possibly in saving your current batch. So if you have promised yourself that I want to make my own wine, do not let these above points put you off. It can be very straight forward.
